As we know, hot sauces can give a burning sensation that, for some customers, can be over powering. There are a couple of tricks to know, so that you can cool your mouth down, and not end up making it worse. DO NOT DRINK WATER! Water is one of the worst ideas if you cannot face the heat. Water opens up the taste buds in the tongue, so that you will end up having the pepper sauce's heat get worse, and stay for longer.
The best way to cool down the effects of hot sauces is to drink dairy products, such as milk (other dairy products like cheese could also work). In dairy products there is a protein, called casein, that counteracts the heat factor in peppers, capsaicin. This idea was also proved on the popular Discovery Channel show Mythbusters. You can also help mask the burning sensation with stimulation from chewing.
It has also been advised to eat fatty foods and beverages after have hot sauce, though it has not been proven that this method works. The science behind this is that capsaicin is less soluble in water then it is in oil, thus the pepper sauce effect will be lessened because of the higher oil levels in these foods and beverages.
