This past week we did just that. At Wilmington Friends School the 8th grade (the class of Chase and I) are doing a service project. It has to do with the overall wellness of the Wilmington area. We will plant trees for better air conditions, paint murals for the overall beauty and inspiration, and buy sports equipment for city wellness centers (I know the last one was kind of random, but our class has eclectic taste). The one problem was that our class's funds were very low (about a $1). So Chase and I thought it would be a great idea to donate to our class's service project. On Monday, the 22nd of February we were able to make a significant contribution to fund. The Bhut Jolakia is also known as the Noga Jolakia, Ghost Chili, Ghost Pepper, and Naga Morich. This pepper has been rated at 1,041,427 Scoville Units. This is amazing because that means that the pepper are at least twice as hot as the Habanero pepper.&lt;br /&gt;A recent addition to the bottles of hot sauce available... or well I wouldn't call it a sauce I would call it a heat additive since it really has no flavor. It is called Blair's 16 Million Reserve. It uses the pure extract from peppers, capsaicin. Pure capsaicin is rated at 16 million Scoville Units. This means it is 16 times hotter then the Bhut Jolakia, and way hotter then any flavored pepper sauce. There have been reports of people having to go to the hospital, because of a few flicks of the powder. There are a couple of tricks to know, so that you can cool your mouth down, and not end up making it worse. DO NOT DRINK WATER! Water is one of the worst ideas if you cannot face the heat. Water opens up the taste buds in the tongue, so that you will end up having the pepper sauce's heat get worse, and stay for longer. &lt;br /&gt;The best way to cool down the effects of hot sauces is to drink dairy products, such as milk (other dairy products like cheese could also work). In dairy products there is a protein, called casein, that counteracts the heat factor in peppers, capsaicin. This idea was also proved on the popular Discovery Channel show Mythbusters. You can also help mask the burning sensation with stimulation from chewing. &lt;br /&gt;It has also been advised to eat fatty foods and beverages after have hot sauce, though it has not been proven that this method works. As we entered the bottling  process, a bottle of hot sauce fell, the glass cracked, and hot sauce went  everywhere. We picked up all of the glass, and Chase –being the creative one-  looked at the hot sauce on the ground, and said, “It looks like… a dragon.” I  came over to take a look, and despite my skepticism it actually, roughly, looked  like a dragon. We grew a little bit obsessed, so we just had to take a quick  picture. In our next meeting, we decided to take a quick peak, and while  admiring our little accident we remembered that we did not yet have a logo. My step-father, Chris, is West Indian. He was the one  who taught me the basics of hot sauce. I loved it so much, I decided to make a business out of it.  Chris owns a medical practice so he wasn’t able to put in all of the time that  was needed to start Demon’s Hot Sauce. So thus, my long time friend Chase,  joined the business. We had goals for this company. We made it green by making  our packaging material from reused shredded newspaper, which happens to also be  recyclable. We made our hot sauce natural by not using any artificial flavors or  preservatives. In addition, we give 10% of our profits to worthy charities. Though we are still working, Demon’s Hot Sauce has done many  things to make it the best pepper sauce on the market.
